McDonald’s: Innovation in Quality assurance
McDonald’s is the first network of quick service restaurants in changing all the frying oil from its restaurants, making their products have trans fat levels of zero or near zero. Mexico was one of the first countries to make the change, the December 31, 2007. The menu items that were the reduction of trans fats were McPatatas, French Fries, Potato Hashbrown, Pays, McNuggets, McPollo, Crispy Chicken Breast and McTrío Marino.
The company is constantly developing its procedures provided in order to assure its customers the highest quality products and food safety. McDonald’s conducted a very thorough investigation, which aimed to reduce the levels of these fats in their products, seeking a type of oil does not produce any alteration in taste and texture of food, nor cause any impact along of life.
This research was largely satisfactory, since it was found that canola oil can be used because it is free of cholesterol, rich in nutrients and vitamins but mainly because it has the quality to remain stable at the temperature at which foods are fried (temperature controlled by computer for each food), which ensures the nutritional value thereof.
The canola is in a corn-soya blend which keeps the texture and flavor preferred by customers, while helping to reduce trans fats and saturated fats, while increasing good fats like monoinsturadas and poliinsturadas. The use of canola oil is recommended by the Department of Health and Human Services, the American Dietetic Association and other health organizations.
The oil used in restaurants is subject to a constant process of verification, monitoring and reporting of quality and features, through procedures such as filtering, continuous removal of impurities from deep fryers, fryers coat, complete change of oil , cleaning of fryers, registration and verification leak oil organoleptic characteristics (characteristics measured by the way). Like McDonald’s, its suppliers also use this type of oil for pre-fried foods so require and carry out research on this topic, thus offering the best in each of the products.
